Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 yellow onion (medium, chopped)
- 1 red bell pepper (chopped)
- 2 clove garlic (minced)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
- 1 can black beans (rinsed and drained)
- 1 cup frozen corn
- 1 can diced tomatoes (undrained)
- 1 cup vegetable broth
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1.5 cup brown rice (uncooked)
- 2 tablespoon fresh cilantro (chopped, for garnish)
Instructions
- Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Stir in the chopped yellow onion and chopped red bell pepper. Cook until softened, about 5 minutes. Add the minced garlic, chili powder, ground cumin, and smoked paprika. Cook for 1 minute more until fragrant.
- Stir in the rinsed and drained black beans, frozen corn, can of diced tomatoes, and vegetable broth. Bring to a simmer and cook for 5-7 minutes, allowing flavors to meld. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- While the skillet simmers, cook the brown rice. Combine 1 1/2 cups uncooked brown rice with 3 cups water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and cook for 18-20 minutes, or until water is absorbed and rice is tender. Fluff with a fork.
- Serve the Santa Fe Turkey and Black Bean Skillet over the cooked brown rice, garnished with fresh cilantro if desired.
Notes
To add a bit of creaminess, a dollop of sour cream or Greek yogurt can be added when serving. Leftovers can be reheated gently on the stovetop or in the microwave.
