Salsa Verde Flank Steak

  1. Season the sliced flank steak with 1/2 teaspoon of the kosher salt and 1/4 teaspoon of the black pepper.
  2. Heat 1/2 tablespoon of the olive oil in a large skillet over medium-high heat for 1 minute, add the seasoned steak strips, and sear for 3 to 4 minutes until browned. Transfer the steak to a clean plate.
  3. Add the remaining 1/2 tablespoon olive oil to the same skillet over medium heat. Add the sliced red bell pepper, green bell pepper, yellow onion, and the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper. Sauté for 5 minutes until tender-crisp.
  4. Pour in the entire jar of salsa verde and return the seared beef along with any rested juices to the skillet. Simmer together for 3 minutes until heated through and bubbling.
  5. Microwave the brown rice pouch according to package instructions (about 90 seconds). Divide the warm rice among 4 plates, top with the saucy beef and pepper mixture, and garnish with chopped fresh cilantro if desired.

Notes

Slicing flank steak across the grain ensures every piece stays tender when quickly seared.
