- 2 pound salmon fillets
- 2 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 0.5 teaspoon black pepper (freshly ground)
- 2 pound broccoli florets
- 1 package instant mashed potatoes (8 servings)
- 1 cup milk
- 4 tablespoon butter (softened)
Instructions
- Prepare the instant mashed potatoes according to package directions, using milk and butter for a creamy consistency. Keep warm.
- While potatoes are preparing, steam the broccoli florets in a steamer basket over simmering water for 5-7 minutes, until tender-crisp.
- Pat salmon fillets dry. In a small bowl, combine garlic powder, onion powder, salt, and black pepper. Season both sides of the salmon generously with the spice mixture.
- Heat olive oil in a large non-stick skillet over medium-high heat. Once hot, place salmon fillets skin-side down (if applicable) and sear for 4-6 minutes, then flip and cook for another 3-5 minutes, or until cooked through and flaky.
- Serve salmon immediately with the steamed broccoli and instant mashed potatoes.
Notes
Ensure salmon is patted dry before cooking for the best sear. For an extra pop of flavor, add a squeeze of lemon juice over the cooked salmon and broccoli.
