Salmon Fillets with Mashed Sweet Potatoes and Broccoli

Instructions

  1. Place cubed sweet potatoes in a large pot of water, bring to a boil, and cook for 12 minutes until fork-tender. Drain, return to the pot, and mash with ground cinnamon and 1/4 teaspoon of the salt.
  2. Meanwhile, steam the broccoli florets in a steamer basket over boiling water for 6 minutes until tender-crisp and vibrant green.
  3. Season salmon fillets with the remaining 1/4 teaspoon salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Sear salmon fillets for 4 minutes per side until nicely browned on the outside and cooked to an internal temperature of 145°F.
  4. Plate each portion of seared salmon alongside warm mashed sweet potatoes and steamed broccoli.
