Ingredients
- 2 can canned salmon (6-ounce, drained and flaked)
- 0.25 cup breadcrumbs
- 1 egg (large, lightly beaten)
- 2 tablespoon fresh parsley (chopped)
- 1 tablespoon lemon juice (fresh)
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 tablespoon olive oil
- 4 whole wheat burger buns
- 1 package mixed greens
- 2 tablespoon balsamic vinaigrette dressing
Instructions
- In a medium bowl, combine drained and flaked canned salmon, breadcrumbs, egg, chopped fresh parsley, lemon juice, salt, and black pepper. Mix gently until just combined. Form into 4 patties.
- Heat olive oil in a large non-stick skillet over medium heat. Add salmon patties and cook for 4-5 minutes per side, or until golden brown and heated through.
- While burgers cook, prepare the salad: In a separate bowl, toss mixed greens with balsamic vinaigrette dressing.
- Serve salmon burgers on whole wheat buns with the green salad on the side.
Notes
