Ingredients
- 1 whole rotisserie chicken
- 3 package Uncle Ben's microwaveable brown rice
- 1 can black beans (rinsed and drained)
- 12 ounce frozen corn
- 3 avocado cups
- 0.5 red onion (medium, finely diced)
- 0.5 bunch fresh cilantro (chopped)
- 2 limes (juiced)
- 2 tablespoon olive oil
- 1.5 teaspoon chili powder
- 1.5 teaspoon ground cumin
- 0.5 teaspoon garlic powder
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper (ground)
Instructions
- Shred the rotisserie chicken meat from the bones and set aside. Discard skin and bones or save for broth.
- In a medium bowl, combine the rinsed and drained black beans with 1 teaspoon of chili powder, 1 teaspoon of ground cumin, 1/2 teaspoon of garlic powder, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir well to coat.
- Prepare the microwaveable brown rice according to package directions, typically 90 seconds per packet. Set aside.
- While rice cooks, heat the frozen corn in a microwave-safe bowl for 2-3 minutes, or until hot. Alternatively, sauté in a small pan over medium heat for 3-5 minutes.
- In a small bowl, whisk together the juice of 1 lime, 2 tablespoons of olive oil, the remaining 1/2 teaspoon of chili powder, 1/2 teaspoon of ground cumin, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir in the chopped fresh cilantro and finely diced red onion.
- To assemble the bowls: Divide the cooked brown rice among 6 serving bowls. Top each with shredded rotisserie chicken, seasoned black beans, warm corn, and an avocado cup.
- Drizzle generously with the fresh lime-cilantro dressing. Serve immediately.
Notes
Leftovers can be stored in airtight containers in the refrigerator for up to 3 days. To reheat, warm the chicken, rice, and corn, then add fresh avocado and dressing.
