  1. Shred the rotisserie chicken meat from the bones and set aside. Discard skin and bones or save for broth.
  2. In a medium bowl, combine the rinsed and drained black beans with 1 teaspoon of chili powder, 1 teaspoon of ground cumin, 1/2 teaspoon of garlic powder, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir well to coat.
  3. Prepare the microwaveable brown rice according to package directions, typically 90 seconds per packet. Set aside.
  4. While rice cooks, heat the frozen corn in a microwave-safe bowl for 2-3 minutes, or until hot. Alternatively, sauté in a small pan over medium heat for 3-5 minutes.
  5. In a small bowl, whisk together the juice of 1 lime, 2 tablespoons of olive oil, the remaining 1/2 teaspoon of chili powder, 1/2 teaspoon of ground cumin, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir in the chopped fresh cilantro and finely diced red onion.
  6. To assemble the bowls: Divide the cooked brown rice among 6 serving bowls. Top each with shredded rotisserie chicken, seasoned black beans, warm corn, and an avocado cup.
  7. Drizzle generously with the fresh lime-cilantro dressing. Serve immediately.

Notes

Leftovers can be stored in airtight containers in the refrigerator for up to 3 days. To reheat, warm the chicken, rice, and corn, then add fresh avocado and dressing.
