Rosemary Garlic Chicken with Smashed Cauliflower

  1. Preheat oven to 400°F (200°C). Lightly grease a baking sheet.
  2. In a small bowl, combine olive oil, rosemary, minced garlic, salt, and black pepper. Rub the mixture over the chicken breasts and place them on one side of the prepared baking sheet.
  3. Place the cauliflower florets in a microwave-safe bowl with 2 tablespoons of water, cover, and microwave for 5-7 minutes, until tender. Alternatively, steam or boil until tender.
  4. While the chicken cooks, mash the tender cauliflower with a fork or potato masher. Stir in the chicken broth until smooth and creamy. Season with salt and pepper to taste.
  5. Add the trimmed green beans to the other side of the baking sheet with the chicken. Drizzle with a little olive oil and season with salt and pepper. Roast for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and vegetables are tender-crisp.
  6. Serve the rosemary garlic chicken alongside the smashed cauliflower and roasted green beans.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat gently in the microwave or oven.
