Rosemary Garlic Chicken with Smashed Cauliflower and Roasted Poblano Peppers

  1. Preheat your oven to 400°F. Lightly grease a baking sheet. In a small bowl, combine 1 tablespoon of olive oil, 1 tablespoon of fresh rosemary, 2 cloves of minced garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  2. Pat the chicken breasts dry and rub the prepared mixture over them. Place the chicken on one side of the prepared baking sheet.
  3. Place the cauliflower florets in a microwave-safe bowl with 1/2 cup of water, cover, and microwave for 10-12 minutes, or until very tender. Alternatively, steam or boil until tender.
  4. In a separate bowl, toss the sliced poblano peppers with the remaining 1/2 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper. Add the seasoned poblano peppers to the other side of the baking sheet with the chicken.
  5. While the chicken and peppers roast, cook the brown rice. Combine 1 cup uncooked brown rice with 2 cups of water in a small pot. Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until water is absorbed and rice is tender. Remove from heat and let stand, covered, for 5 minutes.
  6. Roast the chicken and poblano peppers for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the peppers are tender and slightly charred. While roasting, mash the tender cauliflower with a fork or potato masher. Stir in the 3/4 cup of chicken broth, remaining 1 tablespoon of fresh rosemary, 1 clove of minced garlic, and remaining 1/4 teaspoon of black pepper until smooth and creamy. Season to taste with additional salt if needed.
  7. Serve the rosemary garlic chicken alongside the smashed cauliflower, roasted poblano peppers, and cooked brown rice.

Notes

Leftovers can be stored in an airtight container for up to 3 days and reheat well in the microwave or oven.
