Ingredients
- 1 tablespoon olive oil
- 0.5 yellow onion (medium, chopped)
- 1 green bell pepper (chopped)
- 2 clove garlic (minced)
- 2 can black beans (15 ounce, rinsed and drained)
- 1 can diced green chiles (4 ounce, undrained)
- 1 teaspoon ground cumin
- 0.5 teaspoon chili powder
- 8 corn tortillas
- 1 can red enchilada sauce (10 ounce, low sodium)
- 0.5 cup reduced-fat cheddar cheese (shredded)
- 2 cup shredded lettuce (shredded)
Instructions
- Preheat oven to 375 degrees Fahrenheit (190 Celsius). Lightly coat a 9x13 inch baking dish with olive oil or cooking spray.
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Add chopped yellow onion, green bell pepper, and minced garlic. Sauté until softened, about 5-7 minutes.
- Stir in the rinsed and drained black beans, diced green chiles, ground cumin, and chili powder. Cook for 2-3 minutes, gently mashing some of the beans with the back of a spoon to create a creamier texture.
- Pour about 1/4 cup of the red enchilada sauce into the bottom of the prepared baking dish. Warm the corn tortillas briefly in the microwave or a dry skillet to make them more pliable.
- Spoon about 1/4 cup of the black bean mixture onto each tortilla, sprinkle with a small amount of shredded reduced-fat cheddar cheese, then roll tightly and place seam-side down in the baking dish.
- Once all tortillas are filled and rolled, pour the remaining red enchilada sauce over them and sprinkle with the remaining shredded reduced-fat cheddar cheese. Bake for 15-20 minutes, or until the cheese is melted and bubbly.
- Serve hot, garnished with shredded lettuce.
