Ingredients
- 1 can black beans (15 ounces, rinsed and drained)
- 1 cup frozen corn (thawed)
- 0.5 cup salsa (mild or medium)
- 0.25 cup fresh cilantro (chopped)
- 1 tablespoon lime juice
- 8 flour tortillas (large)
- 1.5 cup shredded cheese (Monterey Jack or cheddar)
- 4 cup shredded lettuce
Instructions
- In a medium bowl, combine the rinsed and drained black beans, thawed frozen corn, salsa, chopped fresh cilantro, and lime juice. Mix well.
- Lay out one large flour tortilla. Spread a layer of shredded lettuce down the center, leaving space at the ends.
- Spoon about 1/2 cup of the black bean and corn mixture over the lettuce. Sprinkle with about 3 tablespoons shredded cheese.
- Fold in the sides of the tortilla, then tightly roll it up from the bottom. Repeat with the remaining tortillas and filling.
- Serve immediately.
