Ingredients
- 1 pound ground beef (lean)
- 1 yellow onion (medium, chopped)
- 1 green bell pepper (thinly sliced)
- 1 red bell pepper (thinly sliced)
- 1 tablespoon olive oil
- 1.25 ounce taco seasoning
- 0.5 cup water
- 8 flour tortillas (small)
- 1 tomato (large, chopped)
- 0.5 cucumber (diced)
- 1 tablespoon lime juice (freshly squeezed)
- 0.25 teaspoon salt
- 1 avocado (sliced)
Instructions
- Preheat oven to 400 degrees F (200 degrees C).
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and chopped yellow onion. Cook, breaking up the beef, until browned, about 5-7 minutes. Drain any excess fat.
- Stir in sliced green bell pepper, red bell pepper, taco seasoning, and 1/2 cup water. Bring to a simmer and cook for 5 minutes until vegetables are tender-crisp and sauce has thickened slightly.
- Lay out the flour tortillas. Spoon about 1/4 cup of the beef and vegetable mixture down the center of each tortilla. Roll them up tightly and place seam-side down on a large baking sheet.
- Bake for 8-10 minutes, or until the tortillas are lightly toasted and the filling is heated through.
- While tortillas bake, combine chopped tomato, diced cucumber, 1 tablespoon lime juice, and 1/4 teaspoon salt in a small bowl for the quick salad.

Notes
You can warm the tortillas briefly in the microwave before rolling to make them more pliable and prevent cracking.
