Rolled Beef and Peppers Tortillas

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and chopped yellow onion. Cook, breaking up the beef, until browned, about 5-7 minutes. Drain any excess fat.
  3. Stir in sliced green bell pepper, red bell pepper, taco seasoning, and 1/2 cup water. Bring to a simmer and cook for 5 minutes until vegetables are tender-crisp and sauce has thickened slightly.
  4. Lay out the flour tortillas. Spoon about 1/4 cup of the beef and vegetable mixture down the center of each tortilla. Roll them up tightly and place seam-side down on a large baking sheet.
  5. Bake for 8-10 minutes, or until the tortillas are lightly toasted and the filling is heated through.
  6. While tortillas bake, combine chopped tomato, diced cucumber, 1 tablespoon lime juice, and 1/4 teaspoon salt in a small bowl for the quick salad.
  7. Serve the Rolled Beef and Peppers Tortillas hot, topped with sliced avocado and the fresh tomato-cucumber salad on the side.

Notes

You can warm the tortillas briefly in the microwave before rolling to make them more pliable and prevent cracking.
