Instructions

  1. Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. In a large bowl, combine the 1 pound ground turkey, 1 chopped red bell pepper, 1 chopped yellow bell pepper, 1 chopped yellow onion, and 2 minced garlic cloves.
  3. Drizzle with 2 tablespoons olive oil, and season with 1 teaspoon dried oregano, 1 teaspoon dried basil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix everything thoroughly with your hands.
  4. Spread the mixture evenly on a large baking sheet. Roast for 20 minutes.
  5. Remove the baking sheet from the oven and stir in the 5 ounces fresh spinach until wilted. Return to the oven and cook for another 5-10 minutes, or until the turkey is fully cooked through and vegetables are tender.
  6. While the bake finishes, prepare the couscous. Place the 1 cup couscous in a heatproof bowl. Pour the 1 1/4 cups hot chicken broth over the couscous. Cover with a plate or plastic wrap and let stand for 5 minutes, or until the liquid is absorbed. Fluff with a fork.
  7. Serve the Roasted Mediterranean Ground Turkey Bake immediately with the fluffy couscous.

Notes

This bake is excellent for meal prep; simply store portions in containers with the couscous and reheat in the microwave or oven. For a gluten-free option, swap couscous for quinoa or rice.
