Ingredients
- 0.75 pound chicken breast (boneless, skinless, cut into 1-inch pieces)
- 1 tablespoon olive oil
- 0.5 teaspoon dried basil
- 0.5 teaspoon dried oregano
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 1 pint cherry tomatoes
- 1 lemon (thinly sliced)
- 2 cup microwavable mashed potatoes
Instructions
- Preheat your oven to 400°F (200°C).
- In a medium bowl, toss the chicken breast pieces with the olive oil, dried basil, dried oregano, kosher salt, and black pepper until evenly coated.
- Spread the seasoned chicken and cherry tomatoes in a single layer on a large baking sheet. Arrange the thinly sliced lemon amongst the chicken and tomatoes.
- Roast for 15-18 minutes, or until the chicken is cooked through (internal temperature 165°F/74°C) and the tomatoes are softened.
- While the chicken is roasting, prepare the microwavable mashed potatoes according to package directions.
- Serve the roasted lemon herb chicken and cherry tomatoes immediately with the mashed potatoes.
Notes
Ensure chicken is cut into similar-sized pieces for even cooking. For extra flavor, a sprinkle of fresh parsley after roasting can be added.
