Roasted Lemon Herb Chicken with Cherry Tomatoes

  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, toss the chicken breast pieces with the olive oil, dried basil, dried oregano, kosher salt, and black pepper until evenly coated.
  3. Spread the seasoned chicken and cherry tomatoes in a single layer on a large baking sheet. Arrange the thinly sliced lemon amongst the chicken and tomatoes.
  4. Roast for 15-18 minutes, or until the chicken is cooked through (internal temperature 165°F/74°C) and the tomatoes are softened.
  5. While the chicken is roasting, prepare the microwavable mashed potatoes according to package directions.
  6. Serve the roasted lemon herb chicken and cherry tomatoes immediately with the mashed potatoes.

Notes

Ensure chicken is cut into similar-sized pieces for even cooking. For extra flavor, a sprinkle of fresh parsley after roasting can be added.
