  1. Preheat your oven to 400 degrees Fahrenheit (200°C).
  2. Pat chicken thighs dry with paper towels. In a large bowl, combine chicken thighs with 1 tablespoon of olive oil, minced garlic, dried oregano, 3/4 teaspoon kosher salt, and 1/4 teaspoon black pepper. Toss to coat evenly.
  3. On a large baking sheet, toss the cut red potatoes with 1 tablespoon of olive oil, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper.
  4. Arrange the seasoned potatoes in a single layer on one side of the baking sheet. Roast for 15 minutes.
  5. After 15 minutes, add the green beans to the baking sheet alongside the potatoes. Toss the green beans with the remaining 1 tablespoon of olive oil and a pinch of kosher salt. Place the seasoned chicken thighs among the vegetables.
  6. Return the baking sheet to the oven and roast for another 20-25 minutes, or until the chicken thighs are cooked through (internal temperature 165°F/74°C) and the skin is crispy, and vegetables are tender.
  7. Squeeze fresh lemon juice over the cooked chicken and vegetables before serving. Garnish with lemon slices, if desired.

Notes

Ensure chicken thighs are well-browned for extra crispy skin. Adjust roasting time slightly based on thigh size.
