Roasted Herb Chicken with Garlic Cauliflower Mash

Instructions

  1. Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels. In a bowl, toss chicken thighs with 1 tablespoon olive oil, Italian seasoning, 1/2 teaspoon kosher salt, and 1/2 teaspoon black pepper.
  2. Place seasoned chicken thighs on a baking sheet. Roast for 25-30 minutes, or until cooked through and nicely browned, flipping once.
  3. While chicken roasts, place cauliflower florets in a large pot and cover with water. Add 1/2 teaspoon kosher salt. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until very tender. Drain well.
  4. Return drained cauliflower to the pot. Add butter, minced garlic, heavy cream, and Parmesan cheese. Mash with a potato masher or use an immersion blender until smooth and creamy. Season with additional salt and pepper to taste, if desired.
  5. Steam or lightly sauté green beans with remaining 1 tablespoon olive oil until tender-crisp, about 5-7 minutes.
  6. Serve roasted herb chicken thighs immediately with garlic cauliflower mash and green beans.

Notes

Leftovers store well in an airtight container for up to 3 days. To simplify, prepare the cauliflower mash ahead of time and reheat gently before serving.
