Instructions

  1. Preheat oven to 400°F (200°C).
  2. On a small baking sheet, toss the chicken drumstick with 1/4 tablespoon olive oil, 1/16 teaspoon salt, 1/16 teaspoon black pepper, and 1/8 teaspoon dried oregano. Arrange on one side of the baking sheet.
  3. In a bowl, toss the cubed sweet potato with the remaining 1/4 tablespoon olive oil, 1/16 teaspoon salt, and 1/16 teaspoon black pepper. Spread out on the other side of the baking sheet.
  4. Roast for 20 minutes.
  5. Remove the baking sheet from the oven. Add the trimmed asparagus spears to the baking sheet. Return to the oven and continue roasting for another 15-20 minutes, or until the chicken is cooked through (internal temperature 165°F / 74°C), the sweet potatoes are tender and slightly caramelized, and the asparagus is tender-crisp.
  6. Serve immediately.

Notes

Using a single baking sheet minimizes cleanup for this easy roasted meal.
