Ingredients
- 1 chicken drumstick
- 0.5 tablespoon olive oil
- 0.125 teaspoon salt
- 0.125 teaspoon black pepper
- 0.25 teaspoon dried oregano
- 1 sweet potato (small, peeled and cubed)
- 0.5 cup asparagus spears (trimmed)
Instructions
- Preheat oven to 400°F (200°C).
- On a small baking sheet, toss the chicken drumstick with 1/4 tablespoon olive oil, 1/16 teaspoon salt, 1/16 teaspoon black pepper, and 1/8 teaspoon dried oregano. Arrange on one side of the baking sheet.
- In a bowl, toss the cubed sweet potato with the remaining 1/4 tablespoon olive oil, 1/16 teaspoon salt, and 1/16 teaspoon black pepper. Spread out on the other side of the baking sheet.
- Roast for 20 minutes.
- Remove the baking sheet from the oven. Add the trimmed asparagus spears to the baking sheet. Return to the oven and continue roasting for another 15-20 minutes, or until the chicken is cooked through (internal temperature 165°F / 74°C), the sweet potatoes are tender and slightly caramelized, and the asparagus is tender-crisp.
- Serve immediately.
