Roasted Atlantic Cod with Braised Cabbage and Potatoes

  1. Preheat the oven to 400 degrees F.
  2. In a large skillet, combine the shredded green cabbage, 1/2 cup of water, 1 tablespoon of the avocado oil, the ground caraway seeds, 1/4 teaspoon of the salt, and 1/4 teaspoon of the black pepper.
  3. Cover the skillet with a lid and simmer over medium-low heat for 18 minutes until the cabbage is silky and tender, stirring occasionally.
  4. Simultaneously, boil the diced Yukon gold potatoes in a pot of water for 12 minutes until tender, then drain thoroughly.
  5. Place the Atlantic cod fillets on a baking sheet, brush with the remaining 1 tablespoon of avocado oil, and season with the remaining 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.
  6. Bake the cod in the oven for 12 to 14 minutes until the fish turns opaque and flakes easily with a fork at an internal temperature of 145 degrees F.
  7. Plate the braised cabbage alongside the tender potatoes and rest a baked cod fillet on top to serve.

Notes

Green cabbage provides a hearty texture and plenty of fiber while absorbing the caraway and savory seasonings.
