  1. Bring a large pot of salted water to a rolling boil. Add rigatoni pasta and cook for 11 minutes until al dente, reserving 1/2 cup of pasta cooking water before draining.
  2. While pasta cooks, heat olive oil in a large deep skillet over medium-high heat. Season chicken strips with salt and black pepper, then add to skillet and cook for 6 to 7 minutes until golden and internal temperature reaches 165°F.
  3. Add minced garlic and crushed red pepper flakes to the skillet with the chicken, cooking for 1 minute until fragrant.
  4. Pour in the marinara sauce and bring to a simmer. Stir in the fresh baby spinach, cooking for 1 to 2 minutes until wilted.
  5. Add the drained rigatoni to the skillet, tossing with the sauce and adding a splash of reserved pasta water if needed to coat. Divide into bowls and top each serving with grated parmesan cheese.
