Ingredients
- 1 pound chicken breast (boneless, skinless, diced, cooked)
- 6 cup fresh spinach
- 3 cup broccoli florets (chopped)
- 1 cup radishes (slivered)
- 0.25 cup lemon juice
- 2 tablespoon white vinegar
- 1 tablespoon dried dill
- 1 teaspoon black pepper
Instructions
- If not already cooked, dice the boneless, skinless chicken breast and poach it by simmering in water for 10-12 minutes until cooked through. Drain and let cool slightly.
- Steam the chopped broccoli florets for 3 to 5 minutes, until tender-crisp. You can steam them in a microwave-safe bowl with a splash of water, covered, or in a steamer basket on the stovetop.
- In a small bowl, whisk together the fresh lemon juice, white vinegar, dried dill, and black pepper for the dressing.
- Divide the fresh spinach among four large bowls. Top each with the diced chicken breast, steamed broccoli, and slivered radishes.
- Drizzle the dressing over each bowl and serve immediately.

You can prepare the dressing and cook the chicken and broccoli ahead of time, then assemble the bowls right before serving for a super quick meal.
