  1. If using uncooked chicken breast, heat 1 tablespoon of olive oil in a skillet over medium heat. Cook 1 pound of boneless, skinless chicken breast until cooked through, about 6-8 minutes per side. Shred the chicken using two forks or by hand.
  2. Return the shredded chicken to the skillet (or a clean pan). Add 1/2 cup of chicken broth, 1 packet of ranch seasoning mix, and 1 tablespoon of lime juice. Stir well and simmer for 5-7 minutes until the liquid has mostly absorbed and the chicken is well-coated. Season with salt and black pepper to taste.
  3. Warm the 8 flour tortillas according to package instructions (microwave for 15-20 seconds each, or briefly heat in a dry skillet).
  4. Assemble the wraps: Lay out a warm flour tortilla. Spoon a portion of the zesty ranch chicken onto the center. Top with shredded romaine lettuce, diced Roma tomatoes, and shredded cheddar cheese.
  5. Fold in the sides of the tortilla, then roll it up tightly from the bottom to create a wrap. Serve immediately.

Notes

Using pre-cooked rotisserie chicken can cut down prep time significantly, making this meal even faster. These wraps are great for a quick lunch or dinner and hold up well if packed for a next-day meal.
