Ingredients
- 1 tablespoon olive oil
- 1 pound chicken breast (boneless, skinless, cooked and shredded)
- 0.5 cup chicken broth
- 1 package ranch seasoning mix
- 1 tablespoon lime juice
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (freshly ground)
- 8 flour tortillas (8-inch)
- 2 cup romaine lettuce (shredded)
- 1 cup Roma tomatoes (diced)
- 1 cup shredded cheddar cheese
Instructions
- If using uncooked chicken breast, heat 1 tablespoon of olive oil in a skillet over medium heat. Cook 1 pound of boneless, skinless chicken breast until cooked through, about 6-8 minutes per side. Shred the chicken using two forks or by hand.
- Return the shredded chicken to the skillet (or a clean pan). Add 1/2 cup of chicken broth, 1 packet of ranch seasoning mix, and 1 tablespoon of lime juice. Stir well and simmer for 5-7 minutes until the liquid has mostly absorbed and the chicken is well-coated. Season with salt and black pepper to taste.
- Warm the 8 flour tortillas according to package instructions (microwave for 15-20 seconds each, or briefly heat in a dry skillet).
- Assemble the wraps: Lay out a warm flour tortilla. Spoon a portion of the zesty ranch chicken onto the center. Top with shredded romaine lettuce, diced Roma tomatoes, and shredded cheddar cheese.
- Fold in the sides of the tortilla, then roll it up tightly from the bottom to create a wrap. Serve immediately.
Notes
Using pre-cooked rotisserie chicken can cut down prep time significantly, making this meal even faster. These wraps are great for a quick lunch or dinner and hold up well if packed for a next-day meal.
