Ingredients
- 8 ounce shrimp (large, peeled and deveined)
- 1 tablespoon soy sauce (low-sodium)
- 1 teaspoon sesame oil
- 0.5 teaspoon fresh ginger (grated)
- 0.25 teaspoon black pepper
- 1 tablespoon olive oil
- 1 head broccoli (cut into florets)
- 2 clove garlic (minced)
- 0.5 cup brown rice (uncooked)
- 1 cup water
Instructions
- Combine uncooked brown rice and water in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until all liquid is absorbed and rice is tender. Fluff with a fork.
- While the rice cooks, pat the peeled and deveined shrimp dry. In a medium bowl, toss shrimp with low-sodium soy sauce, sesame oil, grated fresh ginger, and black pepper. Let marinate for at least 5 minutes.
- Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the broccoli florets and cook, stirring occasionally, until crisp-tender and slightly charred, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
- Push the broccoli to one side of the skillet. Add the marinated shrimp to the other side in a single layer. Cook shrimp for 1-2 minutes per side, until pink and opaque. Toss everything together.
- Serve the quick-seared shrimp and garlic broccoli immediately over the fluffy brown rice.
Notes
For an extra kick, add a pinch of red pepper flakes with the ginger. Ensure shrimp are patted very dry before searing for best results.
