  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat.
  2. Add yellow onion and garlic to the pot and cook until softened, about 3 minutes.
  3. Stir in tomato sauce, diced tomatoes, kidney beans, black beans, chili powder, ground cumin, salt, and black pepper.
  4. Bring the chili to a simmer, then reduce heat to low and cook for at least 10 minutes to allow flavors to meld. Stir occasionally.
  5. Serve hot, garnished with corn chips or over a bed of rice if desired.

Notes

This quick chili recipe is a great option for cool weather. You can adjust the spice level by adding a pinch of cayenne pepper.
