Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 yellow onion (medium, diced)
- 2 clove garlic (minced)
- 1 can tomato sauce
- 1 can diced tomatoes (undrained)
- 1 can kidney beans (rinsed and drained)
- 1 can black beans (rinsed and drained)
- 2 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 cup corn chips
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat.
- Add yellow onion and garlic to the pot and cook until softened, about 3 minutes.
- Stir in tomato sauce, diced tomatoes, kidney beans, black beans, chili powder, ground cumin, salt, and black pepper.
- Bring the chili to a simmer, then reduce heat to low and cook for at least 10 minutes to allow flavors to meld. Stir occasionally.
- Serve hot, garnished with corn chips or over a bed of rice if desired.
Notes
This quick chili recipe is a great option for cool weather. You can adjust the spice level by adding a pinch of cayenne pepper.
