- 0.5 yellow onion (chopped)
- 2 clove garlic (minced)
- 1 teaspoon dried Italian seasoning

- 1 can diced tomatoes (undrained)
- 2.5 cup beef broth
- 8 ounce small pasta
- 0.5 cup cheddar cheese (shredded)
Instructions
- Heat olive oil in a large deep skillet or Dutch oven over medium-high heat. Add ground beef and chopped yellow onion. Cook, breaking up the beef, until browned and the onion is softened, about 5-7 minutes. Drain any excess fat.
- Stir in minced garlic, dried Italian seasoning, salt, and black pepper. Cook for 1 minute until fragrant.
- Add the undrained diced tomatoes and beef broth to the skillet. Bring the mixture to a boil.
- Stir in the small pasta. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until pasta is tender and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
- Remove from heat and let stand for 5 minutes. Serve warm, topped with shredded cheddar cheese if desired.
