Ingredients
- 1.5 pound chicken breast (boneless, skinless)
- 1 head cauliflower (chopped into florets)
- 12 ounce green beans (trimmed)
- 1.5 tablespoon olive oil (extra virgin)
- 4 clove garlic (minced)
- 1 tablespoon Herbes de Provence (dried)
- 0.5 teaspoon salt
- 0.5 teaspoon black pepper (ground)
Instructions
- Preheat oven to 400°F (200°C). Lightly coat a large baking sheet with a small portion of olive oil.
- Rub chicken breast with 1/2 tbsp olive oil, dried Herbes de Provence, half the minced garlic, 1/4 tsp salt, and 1/4 tsp black pepper.
- Toss green beans with 1/2 tbsp olive oil, remaining garlic, 1/8 tsp salt, and 1/8 tsp black pepper. Place chicken breast and green beans on the sheet pan and roast for 20-22 minutes until chicken reaches an internal temperature of 165°F.
- Steam cauliflower florets in a pot with 1 cup water for 10 minutes until fork-tender, then drain thoroughly.
- Mash steamed cauliflower with remaining 1/2 tbsp olive oil, remaining 1/8 tsp salt, and remaining 1/8 tsp black pepper until smooth.
- Slice chicken breast and serve immediately alongside herbed cauliflower mash and roasted green beans.
