- 0.25 teaspoon black pepper (ground)
Instructions
- Preheat oven to 400 degrees F. Arrange cod fillets in a lightly oiled baking dish.
- Brush fish with 1/2 tablespoon garlic-infused olive oil and season with 1/2 teaspoon herbes de Provence, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.
- Bake for 12 to 14 minutes until cod is opaque throughout, registers 145 degrees F, and flakes easily with a fork.
- Meanwhile, heat the remaining 1/2 tablespoon garlic-infused olive oil in a skillet over medium heat. Add 1 cup trimmed green beans, 1/2 cup diced tomatoes, remaining 1/2 teaspoon herbes de Provence, remaining 1/4 teaspoon salt, and remaining 1/8 teaspoon black pepper with 2 tablespoons water. Cover and braise for 5 minutes until tender-crisp.
- Uncover the skillet, remove from heat, and stir in 2 tablespoons chia seeds and 2 tablespoons finely chopped walnuts.
- Serve baked herb cod alongside warm braised green beans and tomatoes.
