- 6 ounce pork loin (thinly sliced)
- 1 tablespoon soy sauce

- 3 ounce vermicelli rice noodles
- 0.5 cucumber (julienned)
- 1 cup lettuce (shredded)
- 0.25 cup fresh mint leaves (roughly chopped)
- 0.25 cup fresh cilantro (roughly chopped)
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 tablespoon water
- 0.5 carrot (grated)
Instructions
- In a bowl, combine the thinly sliced pork, 1 tablespoon soy sauce, 1 teaspoon sugar, and black pepper. Mix well and let marinate for at least 10 minutes while preparing other ingredients.
- Cook the vermicelli rice noodles according to package directions, typically by soaking in hot water for a few minutes or briefly boiling. Drain well and rinse with cold water to prevent sticking. Set aside.
- Prepare the dressing: In a small bowl, whisk together fish sauce, lime juice, water, and 1 teaspoon sugar until the sugar dissolves. Add grated carrot to the dressing.
- Heat vegetable oil in a skillet or wok over medium-high heat. Add the marinated pork and stir-fry for 3-5 minutes until fully cooked through and slightly caramelized. Remove from heat.
- Assemble the bowls: Divide the cooked vermicelli noodles between two bowls. Top with shredded lettuce, julienned cucumber, fresh mint leaves, fresh cilantro, and the cooked pork. Drizzle generously with the prepared dressing and serve.
Notes
Feel free to add crushed peanuts or a fried egg on top for extra protein and crunch.
