  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground pork and 1/2 diced yellow onion. Cook, breaking apart the pork, until browned and onion is softened, about 6-7 minutes. Drain any excess fat.
  2. Add 1 diced green bell pepper and 1 diced zucchini to the skillet. Cook, stirring occasionally, for 5 minutes until vegetables are tender-crisp.
  3. Stir in 2 minced garlic cloves and 1 teaspoon dried Italian seasoning. Cook for 1 minute until fragrant.
  4. Pour in 1/4 cup no-salt-added tomato sauce and 1/4 cup water or no-salt-added vegetable broth. Bring to a simmer.
  5. Stir in 2 cups fresh baby spinach until just wilted, about 1-2 minutes.
  6. Serve the pork and vegetable mixture over 2 cups cooked whole wheat pasta, dividing evenly into 4 portions.

Notes

Cook your whole wheat pasta while you prepare the skillet mixture to ensure everything is ready at the same time. The vegetables should still have a slight bite for best texture. Any leftovers can be stored in the refrigerator for up to 3 days.
