  1. Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add 1 pound ground pork and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  2. Add 1/2 chopped yellow onion to the skillet and cook until softened, about 3-4 minutes. Stir in 2 cloves minced garlic, 1 teaspoon dried oregano, and 1/2 teaspoon dried basil, cooking for 1 minute until fragrant.
  3. Pour in 1 can crushed tomatoes and 2 cups chicken broth. Bring the mixture to a simmer. Add 8 ounces rigatoni, stirring to submerge the pasta. Cover and cook for 10-12 minutes, or until pasta is al dente, stirring occasionally to prevent sticking.
  4. While pasta cooks, preheat oven or toaster oven for garlic bread according to package directions. Toast 2 slices garlic bread until golden and crisp.
  5. Remove skillet from heat. Stir in 1/2 teaspoon salt and 1/4 teaspoon black pepper. Serve immediately, topped with 1/4 cup grated Parmesan cheese if desired, alongside garlic bread.

Notes

If the sauce becomes too thick while cooking, add a splash more chicken broth or water. Leftovers reheat well in the microwave.
