Ingredients
- 1 pound ground pork
- 1 tablespoon olive oil
- 1 yellow onion (small, diced)
- 1 teaspoon garlic powder
- 0.5 teaspoon onion powder
- 1 teaspoon chili powder

- 0.25 cup water
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 12 corn tortillas
- 10 ounce coleslaw mix
- 0.25 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- 0.25 cup fresh cilantro (chopped)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced yellow onion and cook until softened, about 3 minutes. Add the ground pork to the skillet, breaking it up with a spoon, and cook until browned, about 5-7 minutes. Drain any excess fat.
- Stir in 1 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1 teaspoon of chili powder, 1/2 teaspoon of ground cumin, 1/4 teaspoon of smoked paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Add 1/4 cup of water and stir, scraping up any browned bits from the bottom of the skillet. Reduce heat to low and let it simmer while you prepare the coleslaw.
- In a medium bowl, combine the coleslaw mix with 1/4 cup of mayonnaise, 1 tablespoon of apple cider vinegar, and 1 teaspoon of sugar. Stir well to combine.
- Warm the corn tortillas according to package directions (microwave or pan-fry quickly).
- Serve the seasoned ground pork in warm corn tortillas, topped with the coleslaw and optional fresh cilantro.
Notes
Leftovers can be stored in an airtight container for up to 3 days. Reheat the pork gently and assemble tacos just before serving.
