  1. In a medium bowl, combine the pork tenderloin cubes with 1 tablespoon olive oil, 1 tablespoon fresh lemon juice, dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss to coat evenly.
  2. Prepare the couscous: Place the quick-cooking couscous in a heatproof bowl. Pour hot water over it, cover, and let stand for 5 minutes. Fluff with a fork.
  3. While the couscous sits, prepare the cucumber-tomato salad: In a separate small bowl, combine the diced English cucumber, diced Roma tomatoes, thinly sliced red onion, and chopped fresh parsley. Gently toss.
  4. Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the marinated pork cubes in a single layer and cook for 3-5 minutes per side, turning occasionally, until golden brown and cooked through.
  5. Assemble the bowls: Divide the fluffy couscous among serving bowls. Top with the cooked pork, cucumber-tomato salad, and a dollop of bottled tzatziki sauce. Serve immediately with lemon wedges, if desired.

Notes

Marinating the pork for a bit longer, even 15-20 minutes, will enhance the flavor. For a more traditional touch, you can briefly warm pita bread instead of couscous.
