Ingredients
- 2 pound boneless pork chop (pounded thin into cutlets)
- 0.5 cup all-purpose flour
- 2 eggs (beaten)
- 1.5 cup panko breadcrumbs
- 0.5 cup vegetable oil
- 48 ounce prepared mashed potatoes (refrigerated)
- 32 ounce sauerkraut (drained)
- 6 slice bacon (chopped)
- 1 teaspoon caraway seeds
- 1.5 teaspoon salt
- 0.75 teaspoon black pepper
Instructions
- In a saucepan over medium heat, fry 6 slices chopped bacon for 4 minutes until crisp. Add 32 ounces drained sauerkraut and 1 teaspoon caraway seeds; simmer 5 minutes until hot.
- Heat 48 ounces prepared mashed potatoes in the microwave according to package instructions for 5 minutes.
- Set up 3 shallow bowls: 1/2 cup all-purpose flour in the first; 2 beaten eggs in the second; and 1 1/2 cups panko breadcrumbs, 1 1/2 teaspoons salt, and 3/4 teaspoon black pepper in the third.
- Dredge 2 pounds thin boneless pork chops in flour, dip in egg, and press firmly into breadcrumbs.
- Heat 1/2 cup vegetable oil in a large skillet over medium-high heat. Fry cutlets for 3 minutes per side until crisp and golden brown (145°F).
- Serve crispy pork cutlets immediately with warm caraway bacon sauerkraut and mashed potatoes.
Notes
