  1. Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Add 1 pound of sliced pork sausage and cook until nicely browned, about 5-7 minutes. Remove sausage from the skillet and set aside, leaving rendered fat in the pan.
  2. Add 1 sliced yellow onion to the skillet and sauté for 3-4 minutes until softened. Stir in 1 1/2 cups of quartered small potatoes and cook for another 5 minutes, stirring occasionally.
  3. Add 3 cups of thinly sliced green cabbage and 1/2 cup of chicken broth to the skillet. Season with 1 teaspoon of caraway seeds, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir well.
  4. Reduce heat to medium-low, cover, and cook for 8-10 minutes, or until potatoes are tender and cabbage is wilted, stirring occasionally.
  5. Return the cooked pork sausage to the skillet and toss to combine and heat through for 1-2 minutes.
  6. Serve the pork sausage and cabbage skillet immediately. This is a complete meal in one pan!

Notes

Use a good quality smoked sausage for best flavor. If using fresh sausage, ensure it is fully cooked through.
