Ingredients
- 1 tablespoon olive oil
- 1 pound pork sausage (smoked or fresh, sliced into 1/2-inch rounds)
- 1 yellow onion (medium, sliced)
- 3 cup green cabbage (thinly sliced)
- 1.5 cup small potatoes (quartered)
- 0.5 cup chicken broth
- 1 teaspoon caraway seeds
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Add 1 pound of sliced pork sausage and cook until nicely browned, about 5-7 minutes. Remove sausage from the skillet and set aside, leaving rendered fat in the pan.
- Add 1 sliced yellow onion to the skillet and sauté for 3-4 minutes until softened. Stir in 1 1/2 cups of quartered small potatoes and cook for another 5 minutes, stirring occasionally.
- Add 3 cups of thinly sliced green cabbage and 1/2 cup of chicken broth to the skillet. Season with 1 teaspoon of caraway seeds, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir well.
- Reduce heat to medium-low, cover, and cook for 8-10 minutes, or until potatoes are tender and cabbage is wilted, stirring occasionally.
- Return the cooked pork sausage to the skillet and toss to combine and heat through for 1-2 minutes.
- Serve the pork sausage and cabbage skillet immediately. This is a complete meal in one pan!
Notes
Use a good quality smoked sausage for best flavor. If using fresh sausage, ensure it is fully cooked through.
