Ingredients
- 1 tablespoon olive oil
- 1 pound ground pork
- 1 yellow onion (medium, diced)
- 2 clove garlic (minced)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon dried oregano
- 14.5 ounce diced tomatoes (undrained)
- 15 ounce black beans (rinsed and drained)
- 1.5 cup white rice
- 2.25 cup water
- 15 ounce canned corn (drained)
- 0.25 cup fresh cilantro (chopped)
- 2 tablespoon lime juice
- 1 teaspoon salt (to taste)
- 0.5 teaspoon black pepper (to taste)
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the ground pork and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Stir in the diced yellow onion and minced garlic, and cook for 3-4 minutes until the onion softens.
- Add the chili powder, ground cumin, and dried oregano. Cook for 1 minute until fragrant.
- Stir in the undrained diced tomatoes, rinsed and drained black beans, uncooked white rice, and water. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
- While the pork and rice cook, in a small bowl, combine the drained canned corn, chopped fresh cilantro, and lime juice. Season with salt and black pepper to taste.
- Once the rice is cooked, fluff the pork and rice mixture with a fork. Season with additional salt and black pepper to taste.
- Serve the pork and rice mixture in bowls, topped with generous spoonfuls of the corn and cilantro salad.
