Pork Rice Bowls

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground pork and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  2. Stir in the diced yellow onion and minced garlic, and cook for 3-4 minutes until the onion softens.
  3. Add the chili powder, ground cumin, and dried oregano. Cook for 1 minute until fragrant.
  4. Stir in the undrained diced tomatoes, rinsed and drained black beans, uncooked white rice, and water. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
  5. While the pork and rice cook, in a small bowl, combine the drained canned corn, chopped fresh cilantro, and lime juice. Season with salt and black pepper to taste.
  6. Once the rice is cooked, fluff the pork and rice mixture with a fork. Season with additional salt and black pepper to taste.
  7. Serve the pork and rice mixture in bowls, topped with generous spoonfuls of the corn and cilantro salad.
