  1. Toss 3/4 pound pork loin slices with 1 tablespoon cornstarch and 1/4 teaspoon salt. Set aside. Prepare 1/2 cup microwaveable jasmine rice according to package directions.
  2. In a small bowl, whisk together 2 tablespoons soy sauce, 1 tablespoon rice vinegar, and 1 tablespoon brown sugar to create the stir-fry sauce.
  3. Heat 1 tablespoon sesame oil in a large skillet or wok over high heat. Add the pork and cook until browned and cooked through, about 5 minutes. Remove pork and set aside.
  4. Reduce heat to medium-high. Add 2 cloves garlic, 1 teaspoon fresh ginger, and 1 cup frozen broccoli florets to the skillet. Cook for 3-5 minutes, until broccoli begins to soften.
  5. Return the pork to the skillet. Add 1/2 cup pineapple chunks and the prepared stir-fry sauce. Stir constantly until the sauce thickens and coats the meat and vegetables, about 2 minutes.
  6. Serve the stir-fry immediately over the jasmine rice.

Notes

To ensure the pork cooks quickly, make sure the slices are very thin. The cornstarch helps crisp up the pork exterior and thickens the sauce beautifully.
