  1. If not already cooked, prepare white rice according to package directions. Keep warm.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound lean ground pork and cook, breaking it up with a spoon, until browned, about 6-8 minutes.
  3. Drain any excess fat. Add 1 medium green bell pepper (peeled and diced) and 1 medium red bell pepper (peeled and diced) to the skillet. Cook for 5-7 minutes, stirring occasionally, until bell peppers are very soft.
  4. Stir in 1 teaspoon cumin, 1/2 teaspoon paprika, 1/2 teaspoon onion powder, 1/4 teaspoon garlic powder, 1 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1-2 minutes more, stirring to coat the pork and vegetables with the seasonings.
  5. To serve, divide 2 cups cooked white rice among bowls. Top with the sizzling pork and bell pepper mixture. Add about 1 tablespoon mild salsa to each bowl and a dollop of 1/4 cup plain Greek yogurt if desired.

Notes

This quick meal is fantastic fresh, and leftovers can be stored in the refrigerator for 2-3 days. For reheating, gently warm in the microwave or on the stovetop.
