Ingredients
- 1 pound lean ground pork
- 1 tablespoon olive oil
- 1 green bell pepper (medium, peeled and diced)
- 1 red bell pepper (medium, peeled and diced)
- 1 teaspoon cumin
- 0.5 teaspoon paprika
- 0.5 teaspoon onion powder
- 0.25 teaspoon garlic powder
- 1 teaspoon salt
- 0.25 teaspoon black pepper
- 2 cup white rice (cooked)
- 0.5 cup mild salsa (no chunky vegetables or seeds)
- 0.25 cup plain Greek yogurt (for serving)
Instructions
- If not already cooked, prepare white rice according to package directions. Keep warm.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound lean ground pork and cook, breaking it up with a spoon, until browned, about 6-8 minutes.
- Drain any excess fat. Add 1 medium green bell pepper (peeled and diced) and 1 medium red bell pepper (peeled and diced) to the skillet. Cook for 5-7 minutes, stirring occasionally, until bell peppers are very soft.
- Stir in 1 teaspoon cumin, 1/2 teaspoon paprika, 1/2 teaspoon onion powder, 1/4 teaspoon garlic powder, 1 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1-2 minutes more, stirring to coat the pork and vegetables with the seasonings.
- To serve, divide 2 cups cooked white rice among bowls. Top with the sizzling pork and bell pepper mixture. Add about 1 tablespoon mild salsa to each bowl and a dollop of 1/4 cup plain Greek yogurt if desired.
