  1. Prepare 1 cup pre-cooked white rice according to package directions, typically microwaveable in 90 seconds. While rice cooks, proceed with the pork and cabbage.
  2. Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add 1/2 pound ground pork and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  3. Stir in 1 clove minced garlic and 1 teaspoon grated fresh ginger. Cook for 1 minute until fragrant.
  4. Add 2 tablespoons soy sauce, 1 tablespoon mirin, and 1 tablespoon sugar to the skillet. Stir to combine and simmer for 2-3 minutes, allowing the sauce to thicken slightly and coat the pork.
  5. In a separate pan or in the microwave, quickly sauté or steam 2 cups shredded green cabbage until tender-crisp, about 2-3 minutes. Toss with 1 teaspoon sesame oil.
  6. Divide the cooked white rice between two bowls. Top with the saucy ground pork and the quick-sauteed cabbage.
  7. Garnish with sesame seeds and sliced green onions if desired, and serve immediately.

Notes

You can add a dash of red pepper flakes to the pork for a spicy kick. Use low-sodium soy sauce if preferred.
