Ingredients
- 6 boneless pork chops (4 ounce, 1/2-inch thick)
- 1 tablespoon avocado oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 apples (medium, cored and sliced)
- 0.5 cup chicken broth
- 1 tablespoon apple cider vinegar
- 0.5 teaspoon dried thyme
- 3 cup instant mashed potato flakes
Instructions
- Season the 6 boneless pork chops evenly with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Heat 1 tablespoon avocado oil in a large skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes per side, until golden brown and cooked through. Remove pork chops from skillet and set aside.
- Reduce heat to medium. Add the 2 cored and sliced apples to the skillet and cook for 3-5 minutes, stirring occasionally, until softened.
- Pour in 1/2 cup chicken broth and 1 tablespoon apple cider vinegar. Stir in 1/2 teaspoon dried thyme. Bring to a gentle simmer, scraping up any browned bits from the bottom of the skillet. Return the pork chops to the skillet and let simmer for 1-2 minutes to coat.
- While the pork chops and apples simmer, prepare the 3 cups instant mashed potato flakes according to package directions using water, milk, and butter.
- Serve the pork chops and apples immediately alongside the quick mashed potatoes.
Notes
Adjust the cooking time for pork chops based on their thickness to ensure they are cooked through but remain juicy.
