Ingredients
- 1 pound ground pork (lean)
- 1 tablespoon olive oil
- 0.5 teaspoon chili powder
- 0.5 teaspoon ground cumin
- 0.25 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 tablespoon lime juice (divided)
- 0.25 cup sour cream
- 6 cup shredded lettuce
- 1 red onion (medium, thinly sliced)
- 1 avocado (diced)
- 0.5 cup shredded cheddar cheese
- 2 tablespoon fresh cilantro (chopped)
Instructions
- In a medium bowl, combine 1/2 teaspoon chili powder, 1/2 teaspoon ground cumin, 1/4 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Add 1 pound ground pork and mix well to coat.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the seasoned ground pork and cook, breaking it apart with a spoon, until browned and cooked through, about 8-10 minutes. Drain any excess grease.
- While the pork cooks, prepare the lime crema: in a small bowl, whisk together 1/4 cup sour cream and 1 tablespoon lime juice.
- Divide 6 cups shredded lettuce among 3 serving bowls. Top each with the cooked pork mixture.
- Evenly distribute the sliced red onion, diced avocado, and shredded cheddar cheese among the bowls.
- Drizzle with the lime crema, the remaining 1 tablespoon lime juice, and garnish with fresh cilantro, if desired, before serving.
Notes
You can prep the vegetables and lime crema ahead of time to make this even quicker.
