Ingredients
- 6 ounce pork loin (thinly sliced into 1/4-inch cutlets)
- 2 tablespoon olive oil
- 3 clove garlic (minced)
- 0.25 cup dry white wine
- 0.5 teaspoon paprika
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 crusty rolls (split and lightly toasted)
- 2 cup mixed greens
- 1 tablespoon red wine vinegar
Instructions
- Season the pork loin slices on both sides with 1/4 teaspoon salt and 1/4 teaspoon black pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the pork in a single layer and cook for 2-3 minutes per side, until lightly browned and cooked through. Remove pork from skillet and set aside.
- Reduce heat to medium. Add the remaining 1 tablespoon of olive oil and the minced garlic to the skillet. Cook for 1 minute until fragrant.
- Pour in the dry white wine and bring to a simmer, scraping up any browned bits from the bottom of the pan. Stir in the paprika and remaining 1/4 teaspoon salt. Return the pork to the skillet and toss to coat in the sauce.
- Meanwhile, in a small bowl, whisk together the remaining 1 tablespoon of olive oil and red wine vinegar. Toss the mixed greens with the dressing.
- Fill the toasted crusty rolls with the saucy pork slices. Serve immediately with the simple green salad on the side.
Notes
If you prefer a milder flavor, you can substitute chicken broth for the white wine.
