Pork & Apple Sausage Hash

Ingredients
- 1 tablespoon olive oil
- 1 pound pork sausage (casings removed)
- 1 yellow onion (medium, chopped)
- 2 clove garlic (minced)
- 1.5 pound russet potatoes (peeled and diced into 1/2-inch cubes)
- 1 apple (large, cored and diced into 1/2-inch cubes)
- 1 teaspoon dried sage
- 0.5 teaspoon dried thyme
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 tablespoon fresh parsley (chopped)
Instructions
- Heat 1 tablespoon olive oil in a large cast-iron skillet or other heavy-bottomed pan over medium-high heat. Add 1 pound pork sausage (casings removed) and cook, breaking it apart, until browned, about 5-7 minutes. Drain off most of the grease, leaving about 1 tablespoon in the pan. Remove sausage and set aside.
- Add 1 chopped yellow onion to the skillet and cook until softened, about 4-5 minutes. Stir in 2 minced garlic cloves and cook for 1 minute until fragrant.
- Add 1 1/2 pounds diced russet potatoes to the skillet. Spread them in an even layer and cook, stirring occasionally, for 10-12 minutes until tender and browned. You may need to add a splash of water or cover briefly to help them cook through.
- Return the cooked sausage to the skillet with the potatoes and onions. Stir in 1 diced large apple, 1 teaspoon dried sage, 1/2 teaspoon dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for another 3-5 minutes, until the apple softens slightly and flavors are well combined.
- Serve the hash hot, garnished with optional 2 tablespoons chopped fresh parsley.
Notes
This hash pairs wonderfully with a fried egg on top for a heartier meal. Leftovers reheat well in a skillet to re-crisp the potatoes.
