- 1 pound ground pork
- 1 tablespoon avocado oil
- 0.5 yellow onion (chopped)
- 0.5 cup chicken broth
- 0.25 cup lime juice
- 2 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon red pepper flakes
- 1 head butter lettuce (separated into leaves)
- 2 cup rice (cooked)
- 0.25 cup fresh cilantro (chopped)
Instructions
- Heat avocado oil in a large skillet over medium-high heat. Add ground pork and chopped yellow onion; cook, breaking up the pork, until browned and onion is softened, about 6-8 minutes. Drain any excess fat.
- In a small bowl, whisk together chicken broth, lime juice, soy sauce, honey, and red pepper flakes.
- Pour the sauce over the pork mixture in the skillet. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to thicken slightly.
- While the pork cooks, prepare the cooked rice according to package directions. Separate the butter lettuce leaves.
- Serve the pork mixture in butter lettuce cups, topped with chopped fresh cilantro. Serve with cooked rice on the side.
Notes
For best texture, assemble the lettuce cups just before serving. Leftover pork filling can be reheated and served over rice or as a topping for salads.
