Instructions

  1. In a small bowl, whisk together low-sodium soy sauce, fish sauce, brown sugar, and red pepper flakes (if using). Set aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add ground pork and cook for 5-7 minutes, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add minced fresh ginger and garlic to the skillet and sauté for 1 minute until fragrant.
  4. Add trimmed and halved fresh green beans to the skillet and stir-fry for 3-4 minutes until tender-crisp.
  5. Pour the prepared sauce over the pork and green beans, tossing to coat. Cook for 1-2 minutes until the sauce thickens slightly.
  6. While the stir-fry cooks, microwave the brown rice according to package directions.
  7. Season the stir-fry with salt and black pepper to taste. Divide the microwave brown rice and stir-fry between two plates. Garnish with chopped fresh cilantro, if desired.

Notes

You can add other quick-cooking vegetables like snap peas or shredded carrots if you have them on hand. Adjust ginger and garlic to your taste for a bolder flavor.
