  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground pork; cook, breaking up the pork, until browned, about 7 to 8 minutes. Drain any excess fat.
  2. Add diced yellow onion and diced red bell pepper to the skillet; cook for 3 to 4 minutes until softened. Stir in minced garlic, smoked paprika, ground cumin, dried thyme, salt, and black pepper. Cook for 1 minute until fragrant.
  3. Pour in crushed tomatoes, rinsed and drained cannellini beans, rinsed and drained kidney beans, and chicken broth. Bring the mixture to a simmer.
  4. Reduce heat to medium-low and simmer for 5 to 7 minutes, stirring occasionally, allowing the flavors to meld and the sauce to thicken slightly. Stir in drained sweet corn.
  5. While the skillet simmers, prepare cornbread according to package directions.
  6. Serve the hearty pork and bean skillet hot, garnished with fresh parsley, alongside warm cornbread.
