Ingredients
- 1 pound pork tenderloin (trimmed and sliced into 1/2-inch medallions)
- 2 apples (medium, cored and sliced)
- 1 onion (small, thinly sliced)
- 2 tablespoon olive oil
- 0.5 cup chicken broth
- 1 teaspoon dried sage
- 0.5 teaspoon dried thyme
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 cup couscous (uncooked)
- 1 cup water (boiling)
- 1 pound broccoli floret
Instructions
- Prepare couscous: In a medium bowl, combine 1 cup uncooked couscous with 1 cup boiling water. Cover and let stand for 5-7 minutes, or until water is absorbed. Fluff with a fork.
- While couscous cooks, steam broccoli: Place broccoli florets in a steamer basket over boiling water (or microwave with a splash of water). Steam for 5-7 minutes until tender-crisp.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season pork medallions with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Add pork to skillet and sear for 2-3 minutes per side until lightly browned. Remove pork from skillet and set aside.
- Add remaining 1 tablespoon olive oil to the skillet. Add sliced onion and cook for 3-4 minutes until softened. Add sliced apples, dried sage, dried thyme, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon black pepper. Cook for 5-7 minutes, stirring occasionally, until apples are tender.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Return pork to the skillet and cook for 1-2 minutes, stirring to coat the pork with the apple mixture and heat through.
- Serve the pork and apple mixture with couscous and steamed broccoli.
Notes
Cooked couscous and pork skillet store well in separate containers for reheating. Broccoli is best when reheated gently.
