  1. In a large bowl, whisk together orange juice, juice of 1 lime, minced garlic, ground cumin, smoked paprika, dried oregano, 1 tablespoon olive oil, and 3/4 teaspoon kosher salt. Add chicken thighs, tossing to coat thoroughly.
  2. In a medium saucepan, combine the uncooked white rice, water, and 1/4 teaspoon kosher salt. Bring to a boil, cover, reduce heat to low, and cook for 18 minutes. Stir in remaining lime juice and chopped cilantro off the heat.
  3. Preheat a grill or heavy cast iron skillet to medium-high heat. Remove chicken from marinade and grill for 6 to 7 minutes per side until deeply browned and the internal temperature reaches 165 degrees F. Rest 5 minutes.
  4. Heat the remaining 1 tablespoon of olive oil in a skillet over high heat. Add the thawed sweet corn and remaining 1/4 teaspoon kosher salt, cooking undisturbed for 3 minutes to char, then stirring for 2 more minutes.
  5. Serve the sliced grilled pollo asado alongside the warm cilantro-lime rice and charred corn.

Notes

Chicken thighs handle high heat exceptionally well, staying succulent and absorbing the citrus marinade deeply.
