  1. Season the sliced chicken breasts evenly with 1/2 teaspoon of the salt, the black pepper, and dried oregano.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken cutlets and sear for 3 to 4 minutes per side until golden brown and cooked through to an internal temperature of 165°F. Transfer chicken to a warm plate.
  3. In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the sliced red bell pepper and minced garlic, sautéing for 2 minutes until fragrant and softened.
  4. Pour in the low-sodium chicken broth and lime juice, scraping up any browned bits from the pan. Simmer for 2 minutes to reduce slightly.
  5. Stir in the frozen cauliflower rice and remaining 1/2 teaspoon of salt. Cook, stirring frequently, for 3 minutes until heated through.
  6. Return the chicken and resting juices to the skillet to warm for 1 minute. Garnish with chopped fresh cilantro and serve immediately.
