Poblano Beef Patty Melt

Seared lean ground beef patties topped with blistered poblano peppers and melted reduced-fat provolone on toasted whole wheat bread with a fresh green salad.

  1. In a mixing bowl, combine the lean ground beef, blended smooth cottage cheese, garlic powder, smoked paprika, 3/4 teaspoon of the salt, and the black pepper. Form into 4 equal oval patties.
  2. Heat 1/2 tablespoon of the olive oil in a large skillet over medium-high heat. Add the sliced poblano peppers and yellow onion, searing for 5 minutes until soft and charred at the edges. Remove vegetables to a plate.
  3. Add the remaining 1/2 tablespoon of olive oil to the skillet. Place the beef patties in the skillet and sear for 4 minutes per side until deeply browned and cooked through to an internal temperature of 160 degrees Fahrenheit.
  4. Top each hot patty with a portion of the charred poblano-onion mixture and a slice of reduced-fat provolone cheese. Cover the skillet for 1 minute until the cheese melts completely.
  5. Toast the slices of whole wheat bread. Place each melted patty between two slices of warm toast.
  6. Toss the mixed baby greens with the fresh lemon juice and the remaining 1/4 teaspoon of salt, serving alongside the warm patty melts.

Notes

Blending cottage cheese before mixing into the lean meat adds incredible moisture without extra fat.
