- 1 pound lean ground beef (93% lean)
- 1 cup long-grain white rice
- 2 poblano peppers (medium, seeded and diced)
- 1 red bell pepper (medium, seeded and diced)
- 1 can black beans (rinsed and drained)
- 4 clove garlic (minced)
- 1 tablespoon olive oil
- 1 tablespoon ancho chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 0.75 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 1 lime (cut into wedges)
- 2 tablespoon fresh cilantro (chopped)
Instructions
- Combine long-grain white rice, 2 cups of water, and 1/4 teaspoon of the kosher salt in a small saucepan. Bring to a boil over high heat, cover with a tight-fitting lid, reduce heat to low, and cook for 15 minutes until liquid is absorbed and rice is tender.
- While the rice cooks, heat olive oil in a large skillet over medium-high heat. Add the diced poblano pepper and red bell pepper; sauté for 3 to 4 minutes until lightly blistered and tender-crisp.
- Add the lean ground beef and minced garlic to the skillet. Break the meat apart with a wooden spoon and cook for 5 to 6 minutes until browned and cooked through to an internal temperature of 160°F.
- Stir in the ancho chili powder, smoked paprika, dried oregano, black pepper, remaining 1/2 teaspoon kosher salt, and rinsed black beans. Cook for 2 minutes, stirring gently until thoroughly heated and fragrant.
- Fluff the cooked rice with a fork and divide among four bowls. Top with the warm beef and poblano mixture, garnish with chopped fresh cilantro if desired, and serve with fresh lime wedges.
