Ingredients
- 1 tablespoon olive oil
- 1.25 pound ground beef (85% lean)
- 1 yellow onion (chopped)
- 1 red bell pepper (cored and chopped)
- 1 green bell pepper (cored and chopped)
- 2 clove garlic (minced)
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 0.5 teaspoon black pepper
- 0.25 teaspoon cayenne pepper
- 0.5 cup beef broth
- 1 teaspoon salt
- 2 cup white rice
- 4 cup water
Instructions
- In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add 1 1/4 pounds ground beef and cook, breaking it up, until browned, about 5-7 minutes. Drain any excess fat.
- Add 1 chopped yellow onion, 1 chopped red bell pepper, and 1 chopped green bell pepper to the skillet. Sauté for 5 minutes until vegetables begin to soften.
- Stir in 2 minced garlic cloves, 1 teaspoon dried thyme, 1 teaspoon smoked paprika, 1/2 teaspoon black pepper, and optional 1/4 teaspoon cayenne pepper. Cook for 1 minute until fragrant.
- Pour in 1/2 cup beef broth and bring to a gentle simmer. Continue cooking for 2-3 minutes, allowing flavors to meld. Season with salt to taste.
- While the hash is cooking, prepare 2 cups white rice according to package directions, typically by combining with 4 cups water and cooking until tender.
- Serve the Piquant Beef and Bell Pepper Hash hot over the cooked white rice.
Notes
To further speed up prep, use pre-chopped bell peppers if available. Ensure your beef broth is soy-free. The hash can also be topped with a fried egg for extra richness, if desired.
