  1. Heat the olive oil in a large skillet over medium-high heat. Add the diced yellow onion and green bell pepper, sautéing for 4 minutes until softened.
  2. Add the ground beef and minced garlic to the skillet, breaking the beef apart with a wooden spoon. Cook for 5 to 6 minutes until the beef is fully browned and reaches an internal temperature of 160°F.
  3. Stir in the cubed Russet potato, canned diced tomatoes with their juices, ground cumin, chili powder, dried oregano, salt, and black pepper. Bring the mixture to a gentle boil.
  4. Reduce heat to medium-low, cover, and simmer for 15 minutes, stirring occasionally, until the potatoes are fork-tender and the sauce has thickened.
  5. Warm the corn tortillas in a dry skillet over medium heat for 30 seconds per side. Divide the beef mixture among plates, serving each portion with 2 warm tortillas, fresh avocado slices, and lime wedges for squeezing.

Notes

Keeps well in an airtight container in the refrigerator for up to 4 days. Reheat gently in a skillet or microwave before serving with freshly warmed tortillas.
